
Ramen - Shio 塩ラーメン
Ingredients
Tare
- 2 tbsp Maldon Sea Salt or your favorite sea salt
- 2 tbsp Sake
- 1 tbsp Mirin
- ½ tsp Sugar
- 2 tsp Sesame Oil
- ¼ tsp Light Soy Sauce
Soup
- 5 cups Chicken Stock
- 3 cups Dashi
Toppings
- Fresh ramen noodles
- Soft boiled eggs
- Toasted nori sheets
- Chili oil
Instructions
- Combine all of the ingredients for the Tare in a small bowl and mix thoroughly. Set aside.
- Bring the soup ingredient to a boil. Reduce heat and add the Tare. Mix well and make sure the Tare ingredients dissolve in the soup.
- Cover noodles with the hot Shio Ramen Soup. Make sure the soup comes right above the noodles.
- Top each bowl with 2 quarters of the toasted Nori, half an egg and the marinated scallions. Serve immediately while soup is hot. Drizzle with chili oil if you’d like.
