Ramen - Spicy Shoyu 醤油ラメーン
Ingredients
- 2 packages Ramen Noodle
Soup
- 1 tbsp Sesame oil
- 2 cloves Garlic Minced
- 1.5 inch Ginger Minced
- 1 Green onion Minced
- 2 tsp Spicy chili bean paste with chili La Doubanjiang
- 2 cups Chicken stock Or vegetable stock
- 2 cups Dashi 1 tsp of instant Dashi per 1 cup of boiling water
- 2.5 tbsp Light soy sauce
- 0.5 tbsp Sake
- 1.5 tsp Salt
- 1 tsp Sugar
Toppings
- 1 Ramen soft boiled egg
- Green onion Chopped
- Nori sheets
- Naruto Sliced
- Homemade Chashu
- Shiraga Negi
- Enoki mushrooms
- Corn Grilled
- Bok choy Grilled
Instructions
- Prepare all the toppings.
- Prepare boiling water for the noodles. Fresh ramen noodle will be done cooking in less than 2-3 minutes therefore you should prepare all of your toppings before you start cooking the ramen noodle.
- Heat sesame oil. Add garlic, ginger and green onions and sauté until fragrant.
- Add spicy chili bean paste and stir.
- Add the rest of Soup ingredients and simmer for a few minutes.
- At this point, you can strain the soup or keep it with everything. Keep simmering, but not boiling
- Cook the noodles. My personal recommendation is to reduced the noodle cooking time than what is on the package label. The reason for this is because once you pour the soup over the noodle, it continues to "cook" it.
- Drain the noodles completely and put it in a serving bowl.
- Pour the soup in the bowl and decorate with your toppings. Serve immediately.
