Gobi Biryani गोबी बिरयानी
Ingredients
- 1 Cauliflower chopped in medium sized florets
- 1 ½ cup Basmati rice
- 1 Onion thinly sliced
- 6 Curry leaves
- 2 Tomato finely chopped
- 1 pinch Turmeric powder
- 3 cups Water
- 1 tsp Lemon Juice
- Salt as required
- Coriander leaves for garnish
Spice Paste
- 1 inch Cinnamon powder
- 3 whole cloves
- 3 Green cardamon
- 3 strands Mace
- ½ tsp Cumin seeds
- ½ tsp Poppy seeds optional
- 1 tsp Coriander seed
- 5 Black peppercorns
- ½ tsp Fennel seeds
- 3 tbsp Desiccated coconut
- 2 Green chili chopped
- 1 inch Ginger chopped
- 4 clove Garlic chopped
- 2 tbsp Coriander leaves chopped
- ¼ cup Water for grinding
Instructions
Rice
- Rinse the rice 3-4 times. Soak the rice for 30 minutes in enough water.
- Drain the rice and keep aside
Spice paste
- Take all the ingredients for the spice paste in a small grinder jar.
- Grind to a smooth paste. Keep the spice paste aside.
Biryani
- Heat oil in a thick bottomed pot.
- Add the onion and saute until golden.
- Add curry leaves and the tomato. Mix well. Cover and cook until tomato soften and become mushy.
- Add the spice paste and saute for 2 minutes.
- Add a pinch of turmeric and mix.
- Add the cauliflower and mix.
- Add the rice and gently mix.
- Add 3 cups of water, the lemon juice and salts.
- Seal the pan with an aluminium foil. Cover with its lid.
- Cook for 20 minutes on low heat.
- Remove from heat and let stand for 10 minutes.
- Open the lid and fluff.
- DONE!
