Gobi Biryani गोबी बिरयानी

Ingredients
  

  • 1 Cauliflower chopped in medium sized florets
  • 1 ½ cup Basmati rice
  • 1 Onion thinly sliced
  • 6 Curry leaves
  • 2 Tomato finely chopped
  • 1 pinch Turmeric powder
  • 3 cups Water
  • 1 tsp Lemon Juice
  • Salt as required
  • Coriander leaves for garnish

Spice Paste

  • 1 inch Cinnamon powder
  • 3 whole cloves
  • 3 Green cardamon
  • 3 strands Mace
  • ½ tsp Cumin seeds
  • ½ tsp Poppy seeds optional
  • 1 tsp Coriander seed
  • 5 Black peppercorns
  • ½ tsp Fennel seeds
  • 3 tbsp Desiccated coconut
  • 2 Green chili chopped
  • 1 inch Ginger chopped
  • 4 clove Garlic chopped
  • 2 tbsp Coriander leaves chopped
  • ¼ cup Water for grinding

Instructions
 

Rice

  • Rinse the rice 3-4 times. Soak the rice for 30 minutes in enough water.
  • Drain the rice and keep aside

Spice paste

  • Take all the ingredients for the spice paste in a small grinder jar.
  • Grind to a smooth paste. Keep the spice paste aside.

Biryani

  • Heat oil in a thick bottomed pot.
  • Add the onion and saute until golden.
  • Add curry leaves and the tomato. Mix well. Cover and cook until tomato soften and become mushy.
  • Add the spice paste and saute for 2 minutes.
  • Add a pinch of turmeric and mix.
  • Add the cauliflower and mix.
  • Add the rice and gently mix.
  • Add 3 cups of water, the lemon juice and salts.
  • Seal the pan with an aluminium foil. Cover with its lid.
  • Cook for 20 minutes on low heat.
  • Remove from heat and let stand for 10 minutes.
  • Open the lid and fluff.
  • DONE!
