Kaddu Ki Sabzi कद्दू की सब्जी
Ingredients
- 1 Small pumpkin Washed, peeled and chopped
- ¾ to 1 cup Water
- A few Fresh Coriander Leaves Chopped
- Salt
First Spice
- ¼ tsp Fenugreek seeds
- 1 tsp Cumin seeds
Second Spice
- 1 or 2 Dry Red Chilies Optional
Third Spice
- ½ tsp Red Chili Powder
- ½ tsp Turmeric
- 1 tsp Sugar
Fourth Spice
- 1 tsp Dry Mango Powder Amchur
- ¼ tsp Garam Masala
Instructions
- Heat oil in a large pan
- Add First spice and fry for a minute
- Add Second spice and fry for 15 seconds
- Add pumpkin and Third spice and mix well
- Add water, salt and close the lid. Cook for 15-20 minutes till the pumpkin becomes soft and mushy
- Mash the pumpkin with a spoon and add Fourth spice
- Continue to stir and cook until you are happy with the consistency
- Add Coriander Leaves and serve hot
