Yellow Curry with Sweet Potato แกงเหลืองกับมันเทศ

Ingredients
  

  • 1 Sweet potato Peeled and diced
  • More vegetables To taste
  • 2 Onion Minced
  • 300 g Chicken or Firm tofu

Spice

  • 3 tbsp Yellow Curry Paste Link in description for homemade recipe
  • 1 tsp Garam Masala

Liquid

  • 500 ml Coconut milk
  • 1 tbsp Nuoc-Mâm Can be substitute with 1 tbsp fish sauce and some lime juice
  • 1 tbsp Tamarind paste
  • 1 tbsp Palm sugar Can be substitute with brown sugar

The Ending

  • salt and pepper to taste
  • ½ bunch Fresh Coriander
  • 2 tsp Peanuts Lightly crushed and toasted

Instructions
 

  • Heat oil in a large pan or wok. Grill the chicken on both sides. Remove from the pan.
  • Add the spices and onions to the pan. Cook for about 5 minutes.
  • Add the liquids. Mix well and cook for 10 minutes.
  • Add the sweet potatoes and other vegetables. Cook until they are ready. (About 10 minutes)
  • Add the chicken back to the wok and cook for about 2 minutes.
  • Add the coriander and peanuts. Mix well and serve.
  • DONE
