Yellow Curry with Sweet Potato แกงเหลืองกับมันเทศ
Ingredients
- 1 Sweet potato Peeled and diced
- More vegetables To taste
- 2 Onion Minced
- 300 g Chicken or Firm tofu
Spice
- 3 tbsp Yellow Curry Paste Link in description for homemade recipe
- 1 tsp Garam Masala
Liquid
- 500 ml Coconut milk
- 1 tbsp Nuoc-Mâm Can be substitute with 1 tbsp fish sauce and some lime juice
- 1 tbsp Tamarind paste
- 1 tbsp Palm sugar Can be substitute with brown sugar
The Ending
- salt and pepper to taste
- ½ bunch Fresh Coriander
- 2 tsp Peanuts Lightly crushed and toasted
Instructions
- Heat oil in a large pan or wok. Grill the chicken on both sides. Remove from the pan.
- Add the spices and onions to the pan. Cook for about 5 minutes.
- Add the liquids. Mix well and cook for 10 minutes.
- Add the sweet potatoes and other vegetables. Cook until they are ready. (About 10 minutes)
- Add the chicken back to the wok and cook for about 2 minutes.
- Add the coriander and peanuts. Mix well and serve.
