Kao Soi เกาซี่ - Noi
Mama Noi Cooking Class in Thailand
Ingredients
- 1 tbsp Kao soi curry paste
- 100 g Chicken breast or bone-in or tofu
- 400 ml Coconut milk
- 100 g Boiled egg noodles
- 50 g Deep-fried egg noodles
- 1 tsp Fresh coriander finely chopped
- 1 tsp Spring onion finely chopped
- 1 tsp Palm sugar
- 2 tbsp Fish sauce
- ½ Lime
Instructions
- In a pot at medium heat, add oil and curry paste and saute till fragrant.
- Add the chicken and stir till chicken is cooked.
- Add coconut milk.
- Add palm sugar and fish sauce. Stew for 10 minutes.
- Put boiled egg noodles into a bowl. Pour curry over. Top with deep-fried egg noodles. Garnish with coriander and spring onion. Serve with lime.
