Ingredients
  

  • 2 kg Pork shanks bones
  • 1 Pork foot cut in half
  • 1 Chicken Carcass
  • 4 Leek cut 1 inch length
  • 5 cloves Garlic Peeled and crushed
  • Other vegetables Celery, carrot, onion

Instructions
 

Bones

  • Soak the bones in water overnight in cold water. Change the water multiple times.
  • Place the bones in a large pot and cover generously with water. Bring to a boil and cook for 30 minutes, at medium heat while remove impurities.
  • Remove the bones from the water and rinse them with cold water. Do not hesitate to brush them to remove impurities.

Foot

  • Bring a large casserole of water to a boil.
  • Place the the pork foot and cook for 20 minutes.
  • Remove from water and rinse with cold water.

Broth

  • Place all the ingredients in a large pot and cover generously with water.
  • Bring to a boil, not a simmer, and cook for at least 6 hours.
  • Add some water if the bones are uncovered.
  • Skim regularly, every 30 minutes at the start and after longer as time goes on.
  • Ideally, cook for 24 hours, but nobody got time for that. You are aiming for about 2 liters at the end.
