Ingredients
- 2 kg Pork shanks bones
- 1 Pork foot cut in half
- 1 Chicken Carcass
- 4 Leek cut 1 inch length
- 5 cloves Garlic Peeled and crushed
- Other vegetables Celery, carrot, onion
Instructions
Bones
- Soak the bones in water overnight in cold water. Change the water multiple times.
- Place the bones in a large pot and cover generously with water. Bring to a boil and cook for 30 minutes, at medium heat while remove impurities.
- Remove the bones from the water and rinse them with cold water. Do not hesitate to brush them to remove impurities.
Foot
- Bring a large casserole of water to a boil.
- Place the the pork foot and cook for 20 minutes.
- Remove from water and rinse with cold water.
Broth
- Place all the ingredients in a large pot and cover generously with water.
- Bring to a boil, not a simmer, and cook for at least 6 hours.
- Add some water if the bones are uncovered.
- Skim regularly, every 30 minutes at the start and after longer as time goes on.
- Ideally, cook for 24 hours, but nobody got time for that. You are aiming for about 2 liters at the end.
- DONE!
