Instructions
In a pot at medium heat, add oil and curry paste and saute till fragrant.
Add the chicken and stir till chicken is cooked.
Add coconut milk.
Add palm sugar and fish sauce. Stew for 10 minutes.
Put boiled egg noodles into a bowl. Pour curry over. Top with deep-fried egg noodles. Garnish with coriander and spring onion. Serve with lime.
