Ingredients
  

  • 1 Tbsp Coconut oil
  • 2 Yellow Onions diced
  • 4 cloves Garlic minced
  • 1 Tbsp Ginger minced
  • 4 stalks Celery diced
  • 2 Carrot diced
  • 1 Tbsp Curry powder
  • 1 Tbsp Turmeric
  • 1 tsp Cumin powder
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 1 cup Red lentils
  • 1 cup Green lentils
  • 1 can Coconut milk 496 ml
  • 1 can Diced tomatoes 796 ml
  • 2 cups Vegetable broth
  • 2 cups Spinach chopped

Instructions
 

  • Add all ingredients to Instant Pot in order that they are listed with the exception of spinach.
  • Place lid on Instant Pot and make sure valve is set to seal.
  • Press the pressure cook button and set to high, then cook for 5 minutes. Instant Pot will take about 10-15 minutes to come to pressure then pressure cook the 5 minutes.
  • Do a quick release of the pressure on the Instant Pot by flicking the switch at the top with a spoon. Open the lid when pressure gauge has dropped and the lid opens easily.
  • Stir in spinach, then serve with fresh bread!
  • DONE!
