Char Koay Teow
Ingredients
Magic Sauce
- 2.5 tbsp Oyster sauce
- 2 tbsp Thick soy sauce Cooking caramel
- 6 tbsp Light soy sauce
- ½ tbsp Fish sauce
- 1 tsp Sesame oil
- ½ tsp Ground black pepper
- 6 tbsp Water
Marinade
- 600 g Prawns Can be replace by chicken, pork or tofu
- 2 tbsp Oyster sauce
- 1 tsp Sugar
- 2 tsp Ground black pepper
Construction
- 100 g Flat rice noodles You can use Pad Thai noodles, soak it in water for ten minutes before serving
- 1 tsp Chili paste
- 1 tsp Garlic Chopped
- ½ cup Bean sprouts
- ¼ cup Garlic chives Cut into 1 inch length. You can use green onions.
- 1 Eggs
Presentation
- Shallots Deep fried
- 1 wedge Lime

- Mix all ingredients
Construction
- Heat oil; sauté garlic and chili paste till chili paste is cooked, control the fire, don’t burn it.
- Add in marinated prawns, cook till they start to curl and char a bit, turn on the other side.
- Add in chives, and bean sprouts, and the noodles.
- Pour 2 tbs of the magic sauce sauce. Stir evenly with the noodles over high fire.
- Add in the egg. Let it cook on the side of the wok. Then scramble it ON THE SIDE, before you mix it back into the noodles.
- Serve hot with lime and fried shallots.
